Ingredients:
- 10 lbs of Chicken Wings
- 4 teaspoons olive oil
- 6 jalapeno chiles, minced
- 6 shallots, minced
- 6 garlic cloves, minced
- 3 cups freshly squeezed orange juice
- 2 cups apple cider vinegar
- 1/2 cup dark molasses
- 1 tablespoon sweet butter, melted
Preparation: The wings should be marinated overnight and can be braised (seared) in advance and then refrigerated until ready to bake. Place the wings in a deep baking pan large enough to accommodate them. Heat the olive oil in a skillet and saute the jalapenos and shallots over medium heat for about 3 minutes. Add the remaining marinade ingredients, bring to a simmer, and pour over the wings. Let cool and marinate for 1 or 2 days in the refrigerator covered, turning once if they are not fully immersed. Bring to room temperature before braising (searing).
Cooking: Preheat the oven to 300 degrees. Place the baking pan with the wings and marinade in the oven, covered, for 35 minutes or until the meat is beginning to get tender. Drain the marinade into a saucepan and reduce over medium heat until slightly thickened, about 10 minutes.
